I've been experimenting with oatmeal combinations and this particular mix has been hailed as the "best oatmeal ever." It's preeeety darn good.
Pumpkin Pie Oatmeal (serves 2)
- 1 c. old fashioned oats
- 3/4 c. almond milk
- 1/2 c. water
- 1/2 c. canned pumpkin
- 1/2 banana
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1 tsp. nutmeg
Mix all the ingredients and cook on the stove to desired consistency. Then top with whipped cream (which is a must!) and other goodies. Granola gives these oats a crunch that would normally come from the crust of a pie. The banana sweetens it up without being overpowering. And logically, everything tastes better with peanut butter on top. More, pleaseeee.
