PB&J

Last night I made the huge error of perusing through recipes for baked sweets on foodbuzz before going to bed. I came across this awesome one for Peanut Butter and Jelly Blondies, which looked absolutely delicious in the picture. I was so excited to make them in the morning that I couldn't fall asleep!


I woke up bright and early (again!) and was greeted by this beautiful morning sun. What a great way to start the day! And of course a good omen for my baking exploitations. Even Mr. Bennet took a brief sun-bath and he's not generally fond of direct sunlight, y'know given his British heritage.

On to the baked goodies! I didn't have any light brown sugar, so I used dark, which definitely changed the ascetic appeal of the bars and also sweetened them up quite a bit. The dough ended up looking like a huge glob of peanut butter with a little grape jelly... 

But after 25 minutes in the oven they turned into this: 

These made my place smell DEE-VINE while they were baking, which was a definite plus. I can't say I was a huge fan of the flavor though. They were a little on the sweet side and I would have preferred a more peanut butter-y bite to them. I also think some oats in the mix would have improved the recipe. But overall, they were super easy to make and didn't take up much time! I packed up half the pan and sent them to a special someone who's currently plowing through finals... Hopefully, he doesn't read this before they arrive!
